My apologies if this should be obvious but as someone just looking to use Cesium for the first time, the answer is not immediately apparent in the tutorials on image and terrain layers I have looked through which just focus on the available data.
I will have newly acquired high resolution (5cm / pixel) ortho photography which I would like to add over a few square kilometre area. I will also have a less detailed digital terrain model which I would like to add. How does one add this data to the cesium platform?

No need to apologize! I think the Imagery Tutorial and Terrain Tutorial detail how to load imagery and terrain into Cesium the best. Other than that, you will need to find a way to serve your data from a web server, which is outside of the scope of the CesiumJS library.
We’re working on developing tools for users to do so more easily. They are not yet available publicly, but we have a 3D Tiles Pioneer program to work with people looking to process their data. Check out this page and get in contact with Tim to learn more.
